This is the first time I have made this Strawberry Cheesecake and it is so yummy I thought I would share how I made it.
You will need:
200g crushed digestive biscuits
300g full fat soft cheese
350g condensed milk
3 tsp strawberry jam
Crush the digestive biscuits and melt the butter, then mix these two together. Put the mix in a suitable dish and smooth out. Leave in the fridge for an hour to set.
Mix the condensed milk and soft cheese together. Then using the juice of the two lemons mix that in too.
Once the mix is thick and smooth spoon this over the biscuit base and pop back in the fridge for a few hours to set.
Halve the strawberries and mix in the jam, then pop it on top in whatever way you prefer, I chose a cute heart-shaped.
